This is my delicious chicken,leek&apple pie.The inspiration for this dish came about after brainstorming different recipes to use leeks from the garden!The shortcrust pastry is lovely&light on top.The white sauce is nice&creamy with a hint of mustard;the apple adds a lovely sweetness to the dish,contrasting really well with the bacon,adding depth of flavour to the dish.I would love the the opportunity to cook this for Cully&Sully so they can taste how good it really is! You can’t beat a good pie

With less than 24 hours to go I just wanted to say a thank you to EVERYONE who has supported me over the last month. It has been an incredible journey! Thank you to D.I.T, DBS, Trinity & DCU for their amazing support and encouragement. To all my family & friends too. Especially Paul O'Byrne for being an amazing help. I sure have been Kitchen Compliments best customer the last few weeks with the amount of cupcake cases I have bought!!They were beginning to look at me funny!! Just waiting for my last batch to come out of the oven & then I am off to bed for the last sleep before the FINAL CAMPAIGN DAY!!!eeek!!
