This competition sounds great fun thats why I would love to take part as I have always loved food and am happiest when I cook for family and friends and enjoy all types of food and wine. My sister persuaded me to enter the competition after visiting her last weekend in Monaghan and bringing her some West coast oysters and mussels, I decided to enter the competition, after finishing the glass of wine(I am Sully!!)
You have 500 characters to tell us about your dish:
"Mermaids Delight" I grew up on the West coast of Ireland in Westport and have always been lucky enough to enjoy great local & homegrown produce. Shellfish has always been a favourite and I have won many friends over to love and not be afraid of oysters and mussels. The Oysters are baked for 10 mins with a wonderful stuffing of spinach, garlic, creamed horseradish & parmesan and the mussels are steamed in a tomato,shallot,garlic,chili, fresh coriander & parsley and wine. Bucket List Dish!

Go Regina Go!!! Having tasted many of Regina's meals I suggested that she inter this competition. She is passionate about food, and can make a meal out of anything!!! Combining good food, good wine, and great craic is what Regina is good at, so she deserves a chance in this competition. Olivia
