My food journey began with Food Science in college but it didnt satisfy my food fix so I became a chef and have been working in Cork for the last few years. Ive just returned from a years travelling and I now want to do my own thing with food and that would be my own outside catering company making food just like this dish. I still have lots to learn and thats where Ballymaloe comes into it. This opportunity is perfect for me and with some business guidance from Cully & Sully I cant go wrong!!

Simple really...combine my favourite meat, vegetable and cheese, season with seasonality and you get a Clonakilty Black Pudding, Aubergine and Goat Cheese stack, with Roast Pumpkin, Curly Kale and a Beetroot Cream.
This is the type of food Im passionate about making, dinner party stuff, where you get to try any combinations of flavour, texture and colour and be inventive & creative. I love that this dish works all year round by changing just a few seasonal elements.
