Cooking has always been a huge part of my life.I have been studying architecture for the last 6 years but food has always been there.I have now decided to put my architecture career on hold&do what Im really passionate about.My blog,The Seasonal Kitchen,is a platform where I share my love for all things food.I believe I have the creativity,personality&hardworking skills that Ballymaloe are looking for in their next great chef.Ballymaloe would be a dream for me-the best step forward for my career

This is my delicious chicken,leek&apple pie.The inspiration for this dish came about after brainstorming different recipes to use leeks from the garden!The shortcrust pastry is lovely&light on top.The white sauce is nice&creamy with a hint of mustard;the apple adds a lovely sweetness to the dish,contrasting really well with the bacon,adding depth of flavour to the dish.I would love the the opportunity to cook this for Cully&Sully so they can taste how good it really is! You can’t beat a good pie
