I love food. I love cooking it, finding new things to try, foodie chatter with foodie friends, hoarding recipes and dreaming about a little garden to grow my own! I’d love to become a great cook, to know instinctively that missing ingredient in my sauce and to be able to whip up fabulous feasts for friends and family. It would be an absolute dream to get to Ballymaloe and the thought of replacing my Ballymaloe Cookery Course hardback with the real thing makes me tingle with excitement.
You have 500 characters to tell us about your dish: 
I was out walking last weekend and I came across a tree laden with the last and possibly the tastiest fruits of autumn - the lowly damson. I recruited a tall boy to help pull them and after a bit of a jam marathon I was left with a lovely deep red damson preserve. The damson jam made a perfect base for a warmly spiced damson chicken dish with the addition of some caramelised onions, ginger, garlic, lemon and soy. Yum, it’s the perfect dish to share on a cold and wet autumnal evening.
