I won’t lie & say I always wanted to cook.I never knew what I wanted to do.So I decided it better not to go to college(to save my parents bank accounts!)After 4 years cooking it has become an obsession, I now know what I want to do.Waterford is crying out for a good patisserie & I intend to solve that(if no-one gets there 1st!).Winning this competition would mean I could achieve my goal.I know that its what I want & I’m going to do it,no matter how long it takes or how hard it is,I’m determined!

I baked this a few years ago & took it to work.Everyone loved it,I even got emails asking for the recipe!Since then I keep baking it,trying new things to give it an extra something.The base is light,fluffy & melts in the mouth.The filling is a mix of tart raspberries, sweet strawberries, a sprinkle of sugar & a splash of Crème de Cassis to give it a boozy kick!The topping is a coconut crumble that has a crunchy nuttiness.Served with Chantilly cream & a touch of berry filling,garnished with mint!

Why were these not an option after swimming in dunmore. Perfect to rid the gob of the salty fishy taste.
I will make sure there is plenty of lovely things available after swimming next year! I really do hate that fishy taste!
They would have gone down a treat and replaced that salty fishy taste from the mouth with the lovely sweet alcohol kick you describe. Next year?

Congratulations from a fellow entrant, I can't pretend I'm not ever so slightly jealous, but I'm glad that the prize went to someone who is determined and passionate about quality food and it's availability throughout Ireland. It's also great the the prize ultimately went to a deserving 'wildcard', I guess it proves that the votes weren't everything, it essentially boiled (ha) down to talent, creativity and passion. Well done. I look forward to visiting our cafe in Waterford in the future!
