Later this year I will celebrate my 30th & it has given me the kick in the bum to really start living my life.To do something I've always wanted to do.Since my mid-teens I have wanted to work with food & was always aware of the Ballymaloe cookery school.Although I am a teacher(NT)food is my passion-eating it reading about it & of course cooking it!I love to cook with the children in the school.PLEASE PLEASE Cully & Sully this is my dream & if I do not win the vote consider me as a wildcard!

May I present!Mount Mer-in-guee; elevation c50cm!I feel this dish reflects my quirky and creative personality.It comprises roughly 80 baby meringues. 2 ingred:egg white & sugar with an almost marshmallow like inner texture, as I think they should be.They are sandwiched together with a bitter 70% real dark chocolate ganache, which compliments the sweetness of the meringue.
You might have noticed the lego-men (thanks to Fred in 4th class!) climbing towards the summit, Cully & Sully's great prize!

If there was ever anyone more passionate about food, I haven't met them!! Presentation and flavour are always perfect when Siobhan cooks.
