Good food should satisfy all the senses. Smell great, taste sensational, look amazing, make you hear yourself say “yum” regularly and leave you feeling satisfied. Thai curry in a pineapple was the first meal I cooked for my folks after I moved out of home. That night I was told they’d never again worry about my ability to look after myself. The addition of Colombian rice in the coconut gives a fusion element to the meal, whilst using some coconut milk, and adds a bit of Halloween to the dish.
