Week 11, Tuesday - Wine Exam tomorrow, eek!

Today went a lot smoother than yesterday. I still managed to fit in a bread - this time Granary Loaf.

Mixed flour & salt - mixed water, yeast & treacle & combined all of them together to make the dough. Kneaded it for 10 mins & left to rise for an hour. Then knocked it back & kneaded it for a few mins, then shaped it & put it into an oiled tin to rise again.

Then I started Beef Consomme - all the veg have to be very finely chopped & the beef has to be free from any fat or membrane which is a pain when using shin. Anyway after a long time preparing everything I mixed it with some egg whites & lots of beef stock. Brought it to the boil and then simmered very gently for a long time without stirring. The veg & meat form a crust and the consomme is tucked underneath it, so I ladled it out without disturbing the crust so it doesnt go cloudy.

Next I made a leek mousse. Sweated the white part of the leeks in butter then left to cool. Then whizzed it with some cream & eggs and poured it into moulds and baked in the oven.

Finally I made a rosemary syrup & juiced some lemons for lemonade - yum!
