
Today I started making Croissants. its a lengthy process so its best to do it over 2 days when we have other things to do. So I mixed the dough/pastry (its kind of a mixture of both) and then left it rest. After 2 hours I rolled it out, added a whole load of butter, folded it, rolled it out again and refrigerated. Then after another few hours I went back and rolled it out & folded it again. Ill shape & bake them tomorrow.
Then I made Smoked Irish Salmon with Potato Wafers & Horseradish Cream. The potato wafers are basically homemade crisps but so delicious compared to what you can buy! The horseradish cream was horrible because I hate horseradish & it made me cry while I was grating it, so I hate it even more now!!
I would love to have put up 2 pictures today because this dish did look good, there was a layer of the cream, a potato wafer, salmon, cucumber pickle brushed with lemon juice and there were 3 layers of this with a crisp sticking up at the top. Garnished with some pickled red onion and a sprig of fennel - very pretty if I do say so myself!
I also made Chocolate Ice-cream in chocolate cases (that I made myself) and topped with rum flavoured cream. The ice-cream is particularly hard to make as there are different textures & temperatures being mixed together and we were warned to be quick when mixing as it can "block". I didnt really understand what they meant by this until it happened! I mixed some of my egg yolk mousse with the chocolate mixture and stirred frantically when all of a sudden it turned to solid chocolate. Anyway my teacher knew just the way to fix it - add some pouring cream & then pop it in the microwave for 30 seconds, sshh, dont tell anyone! So it all turned out lovely except my chocolate cases were a tad fragile and this one is broken at the other side of the picture!!
