Monday, Week 11 - Final week of cooking :(

Today was another busy one because Im trying to fit in as much as I can before its all over!

I started with Focaccia made with olive oil dough. its a white yeast bread so still needs kneading & rising. I left my over rise but chilled it for a bit which made it less spring. Then shaped it into a flat loaf, dimpled it, sprinkled with sea salt & olive oil & left it rise again. It worked out really well & was really tasty.

Next I moved on to Sticky Asian Pork, Herb & Roasted Peanut Salad - yummy! Made a marinade with fish sauce, soy sauce, lemongrass, garlic, chilli, shallots & soft brown sugar. I prepared the pork & tossed it in five spice and added to the marinade. I roasted some peanuts, skinned them & chopped them.

Then I rolled out my puff pastry that I made on Thursday and cut it into one big pastry case & lots of tiny little vol au vents. I baked them and then took the top off, scraped out the inside layers of pastry & baked them again briefly. This took so long and therefore delayed everything else. Meanwhile I made some light pastry cream with with Calvados & whipped cream. At this stage I was running out of time so my partner kindly made the Apple & Sweet Geranium compote that would go into my lovely pastry cases (thanks Charlotte oh & Charlie helped too!)

Back to the pork, I fried the pork quickly & threw the rest of the marinade on top to cook for a minute then assembled the salad with all its lovely bits (& some of Sophie's Asian dressing!) This salad is amazing!!

Then I assembled my large vol au vents with a good layer of pastry cream & a layer of apples then popped the lid back on & covered in icing sugar. My teacher said my puff pastry was one of the best she's tasted so far - yay! Smile
