Oh to win Cheffactor. I dream of opening a coeliac friendly deli in Carlow and with this fab prize I would be nearer to that goal I hope, no I KNOW! Since my dauhter, myself and my sister were diagnosed Coeliac almost two years we have had to adapt our cooking and eating habits to G/F but struggled to find yummy desserts, Where better to find it but in our own kitchen. we have tried many, many dishes but this is an absolute favourite. So go, give me a chance and try it, you know you want to.

Humble Pie? I think not any more, although tried and tested this is a winner with family and friends. A friend who is not into desserts, dutifully tried anything I put in front of her in the early G/F days and always gave her honest (sometimes too honest) opinion. She one day she said if I could produce a Lemon Meringue Pie she'd be a happy bunny. So after a few false starts we have it perfected, at least we think so. Crumbly pastry base, sharp lemon filling and light meringue top, YUMMY!!
