Recently I found myself having a 'Rachel from Friends' moment when I mistakenly made 2 recipes in the same dish. Although not as bad as making a shepards pie with custard & jam, I did manage to cross cook Braised Beef & Lamb Casserole with one special ingredient, a can of Smithwicks. And so was born my "Winter Wonderlamb" dish! Cooking has always been a big part of my life & something I love doing for friends, family & pure enjoyment! I would love the opportunity to do the Ballymaloe Course.

My dish Winter Wonderlamb is a shoulder of lamb slow cooked with garlic & rosemary in lamb stock & Smithwicks in the oven (fan assisted) for approx 3 hrs at 180 degrees. Baste every 20 mins. Once cooked pour the juice into a saucepan with 2 tsp of red currant jelly & reduce. Shred lamb off the bone & place into casserole dish with onions, carrots and season with salt & pepper. Pour juice over. Place cubes of potato and parsnips on top & cook for approx 50 mins at 200 degrees. Serve & enjoy!

The presentation and warm surroundings of this Winter Wonder Lamb gives this dish my Number one Vote. Can't wait cook it for my family.
I will definitely try this dish, as it immediately captures the essence of a what a Winter Casserole should be, and it really seems like it would have many depths of flavour.

Apart from its presentation and warm surroudings to compliment your Lamb -I just loved your introduction to your dish. Goes to show from many a misread comes what looks like a lovely meal to enjoy by the fire on a winter evening and I am sure we can look forward to many of those. All the very best. J
