I am 21 & due 2graduate from business&law. In 2nd year Colum O was a guest lecturer for an entrepreneurship module. He told the story of Cully&Sully - a steep learning curve of ups&downs,excitement&tragedy. I was inspired! Having 4years of “know-how”,I am almost ready for the food business.
Except one thing – I want 2be the Cully, as well as the Sully. The prospect of cooking everyday for 3months&learning from the best fills me with excitement! This would complete my education.

Seasonal,local,Irish ingredients at their simplest&best.
Love2say I shot&feathered the duck myself,but I did not.I did however butcher them(Ballymaloe could teach me a few knife skills tho!)
Spotted the quince in my local greengrocer.I’d never cooked it before-the experiment of the dish.Its sweetness complimented the gamey duck.
The only treasure2be found in the Colcannon were puddles of melted butter:)
The red cabbage married each element,adding an Autumnal aroma2the dish&colour2the plate
