Nothing makes me happier than a cooking decent healthy meal and sitting down with good friends with a glass of red wine, all the better if I've had the time, energy and luck to have grown some of the ingredients myself! As a native of Cork I've always been aware of Ballymaloe and have always hoped to gain a place on their comprehensive course. I would love to study every aspect of food, its preparation & culture and would love to do it all the more in Ballymaloe! Please please VOTE FOR ME!!!

This is my favourite dish & it keeps me looking forward to Autumn all year long when venison is in season! Venison is lower in fat, cholesterol & calories than most other meats consumed in Ireland. It is as free range a meat as you can find & works beautifully with seasonal fruits & veg. I like to serve venison loin steaks with a wild blackberry & red wine sauce, creamy potatoe & turnip puree, baby carrots & glazed red & green chicory which adds a hint of bitterness to combat the sweet berries.
