Growing up with a garden full of fruit and legumes, We were sent out to pick them while our pals watched cartoons, Then we'd climb up on chairs and watch our pickings transform, As our mother would seamlessly cook up a storm, Now in my twenties and no longer at home,I shop in the markets and buy locally grown, And to add to the food information I know, I have spent time in Durrus, Ballymaloe and Padstow!So if lucky enough for this prize to be mine, I would follow my dream & make food full time!
You have 500 characters to tell us about your dish: 
This is a rack of lamb with a crust made from basil, garlic, shallots, egg white, breadcrumbs and pistacchios. I cook this in a preheated oven at 220C for about 12-15 minutes (I like my lamb pink!). This dish is gorgeous with roast cauliflour and roast potatoes in winter or a simple green salad and roast poatoes in summer. I am commited to buying local food as much as I can and always buy my meat in O'Flynns on Marlboro street or O'Mahonys in the English market.

Pistachio on lamb!

Pistachio on lamb! mmmmmmm...I would really love to try this. I think lamb and nuts work so well together, especially if the lamb is cooked to perfection as it appears yours is.
