Since being made Redundant from British Telecom in August 2009 i started baking and cooking for a hobby.I recently trialed a stall in Limerick's Milk Market & my Chocolate Chilli Orange Cake went down a treat, i can't believe the demand for this now with customers and friends. It is a result of this that i now want to win this competition to further my skills with the 12 week course in Ballymaloe to gain more experience to make this hobby a career. I have found my passion in Life and I love it..
You have 500 characters to tell us about your dish:
A friend sent me this recipe and as i like to make things my own i changed it a little ( i love taking the risk with baking its such fun) anyway once you bite into this "Little piece of heaven" as my hairdresser called it you will know what im talking about , i added a layer of freshly chopped orange to the top of the cooled cake and covered with rich chocolate icing to which i added extra chilli so now you have layers of Chocolate, Orange and Chilli thoughout in your mouth & it tastes of more..

Ah Thanks Jean , i have to say you have to try it to know what im talking about but trust me its devine .....chilli, choc and orange work great together ..... am experimenting with lots of ideas at the moment.My brother put me onto Molecular gastronomy , its big in the states so i have read up alot on it , google it its very interesting.
