I have been seeking to work evenings in kitchens to get a start as a chef but it has not been fruitful. This competition is a long shot but it represents the ideal chance to break into the culinary world professionally. I have a passion for good food. It is the key to a good life. Not every meal I prepare for myself is elaborate, but I insist on pure, natural ingredients. The food processing industry leaves me cold so I want to be part of the drive to bring people back to real food.
You have 500 characters to tell us about your dish: 
I love the surprising way that trout and bacon contrast in the mind, yet blend beautifully in the oven. The herbs and cream cheese enrich the meat. Each ingredient is necessary and nothing is added for the sake of it. Nature provides wonderful natural flavour in trout. This treatment amplifies that flavour, but does not distort it. The preparation time is relatively short for a fine main course. However, the baking time provides me with ample room to prepare the late-added stock.

The secret ingredient

I think the secret (and shared) ingredient here might be salt! That and butter do wonders for flavour!!
