OK, truth is my mam wasn't any great shakes in the kitchen when I was growing up so I ended up starting to cook for myself in my teens. Since then I've just continued trying new foods and getting stuck into new recipes with UK or Ozzy Masterchef on in the background. Sad, I know! I've even got food apps on my phone! Winning a place in Ballymaloe would be an incredible experience and opportunity for me to see how far I can take this self confessed obsession I have with all things food!

Thai food is one of my favourites and this dish is a bit of an invention of my own based on a soup I had in Thailand a few years ago. It's got great flavours in it coming from ginger, garlic, lemongrass, coriander, lime, coconut and chili and you can adapt it to your own taste. It hits the spot for lots of occasions and it's great hangover cure too! You know when you get home from holidays and you have a longing for something you missed? Well this is the one for me.

Tom makes the most amazing celery soup...head of celery from Dunnes (which is so green that this is the best way to use it up), small handful fresh thyme, 18oz ripe pears, 2 cups chicken broth, 1 1/2 tablespoons flour, 3 bay leaves, good dollop of Irish creamery butter, no preservatives. But don't tell him that I told you his secret recipe.
