I love food- I love to cook, prepare, share and eat it! And after ten years of soul-less, miserable IT, I'm ready for a change. For years I've been dreaming of starting a food business, showcasing the best of Irish fresh and artisan produce, but so far haven't been confident enough to take the risk. Some Ballymaloe and Cully & Sully know-how could change all that!
You have 500 characters to tell us about your dish:
This is an autumn favourite and goes back to me growing up in Canada and visiting farms outside the city with my mum and dad to pick out our Halloween pumpkin! The ingredients of the soup include either pumpkin or butternut squash with chicken stock for the base. I toss in some potatoes for thickening as well as some carrots for additional colour. Spiced with cinnamon, chilli, ground pepper and a pinch of nutmeg, I like to top with creme fraiche and crumbled amaretti biscotti for crouton-crunch!
