So in June, I left a perfectly good job as an art teacher. I smelt the moment, I didn’t need the cooker timer to tell this was it! I had been teaching for fourteen years, and loved it, but ever since I had kids of my own, I have been getting more joy out of cooking with them. So I have set up a cookery school for kids. What’s left now, is to train in Ballymaloe. I can’t tell you how much I would love it. I am enthusiastic, and I work hard, so I promise I would do you proud if you picked me!
You have 500 characters to tell us about your dish:
This dish was a store cupboard creation. It has skinned chicken thighs, onions, garlic, and the best bit... cinnamon, coriander, turmeric and cumin to spice it and dried sultanas and apricots to sweeten it. The liquor is stock and crushed tomatoes, and it is so yummy served with coriander and garlic flatbread.
It is a favourite with the whole family, kids too. For this time of year it is a real warmer and puts everyone in a good mood!
