I’m someone with a dream and like to think that maybe I can realise it if I chase it enough. I’d love to change my life and do something I’m passionate about. I’m taking time out of a successful career as a finance lawyer but really I’m a foodie at heart…the type that reads food blogs at work and reads cookbooks in bed. I am excited, enthusiastic and truly passionate about food. To indulge the joy of cooking and learn how to become a great cook at Ballymaloe would be a dream come true.

A sumptuous platter loaded with spankingly fresh local seafood. The mighty Lobster is from Daithi O’Dowd in Mullaghmore, succulent mussels and clams from Charlie Kelly in Lissadell and juicy langoustine from Killybegs. Cooked in yummy stock and barbecued with chopped garlic, chilli and fresh herbs. Served with wedges of grilled lemon and lime and a bowl of creamy homemade mayonnaise. This scrumptious dish is a stellar way to wile away a lazy afternoon with friends with a glass of white wine.
