My name is Joyce and cooking is my passion, I have always loved it and regretted not pursing it as a career years ago. I am currently trying to get a new business off the ground (called Cookery Coach) showing people how to cook. Doing the 12 week course in Ballymaloe has always been my dream. If I won the Lotto in the morning it would be the first thing I would do. The opportunity to spend 2 weeks with you guys learning about your business would be a fantastic and wonderful experience.
You have 500 characters to tell us about your dish: 
have de-boned the chicken leg and stuffed it with prawns, spinanch and garlic. It is browned in the pan and finished off in the oven. The potatoes are shredded and mixed with Creme Fraiche, a little garlic and seasoning. Then baked in a case in the oven. The carrots have been boiled in olive oil and rosemary. It is a "twist" on the traditional meat, veg and spuds. It is very moist and succulent with lovely flavours. Hope I get the chance to cook it for you!

Like the stuffing with prawns, spinach and garlic.

Never heard to carrots doen in olive oil.Am going to definitely give that a try.
