Cookery has always been a strong passion of mine. From canapés to Sunday roasts, I always try to create a dish that looks as superb as it tastes. To win the opportunity to spend 12 weeks in Ballymaloe learning the skills and creative flair required by top Chefs would be a dream come true.

I made an assortment of Spanish Tapas for my dish. This includes; Sizzling Gambas al Ajillo, Spanish Meatballs with Cracked Olives in Tomato & Garlic Sauce, Embutidos y tabla de quesos, Patatas Bravas, Roasted Red Pepper & Mozzarella on Garlic Toast, Chorizo in Mushroom & Red Wine, Hallumi, Paella with Chicken, Prawns, Green Peas, Carrots, Peppers & Green Beans.
