I've been home cooking for more years than I care to remember. A daily need, it can be a chore, be uplifting but in the end, always satisfying. I've worked as a volunteer in a professional kitchen, I was once employed as a cook for a sailing school. Work evolves, cooking attracts as a complimentary career. Were I to win Cully & Sully Cheffactor, I'd savour the Balymaloe training and relish the challenge, evolving towards a new phase: a life in food - prepping, cooking, serving, satisfying.
You have 500 characters to tell us about your dish:
Smoked Salmon Tart: 'Quality smoked salmon should be left alone...'(Jane Grigson)but this is fab too! Simply make your pastry, line a tart tin, chill and blind bake. In a bowl, mix the organic eggs & yolks, Glenilen creme fraiche, lemon juice & zest, organic parmesan & lashings of fresh dill. Season. Cut Ummera Smoked Salmon into strips. Add sauteed scallions to tart base. Add salmon. Add filling. Bake. Serve hot or cold, lunch or dinner, with tossed salad, dressing & chilled wine. Yummy.

Colin is a great cook and his fish dishes in particular are fantastic! Better than any I have ever tasted anywhere! He makes a mean risotto and I love an excuse to have a meal at his house! He seems to be able to turn his hand to anything! Always fabulously tasty and beautifully presented!

I have had the honour & privilege of tasting Colin's cooking over the years in Glenans Irish Sailing Club, on hols. His cooking is superb, he is a natural. Knows his quality base raw foods & veg, sets up his kitchen like a pro. Preps & cooks in a quietly confident way, serves the dish perfectly, with a smile & a great choice of wine.What more can I say? Colin IS the Cheffactor!

Colin has been cooking for as long as I can remember. He has always been passionate about cooking good fresh food. Not only that but he is also very creative and artistic in his approach, using lots of colour and texture within his meals. It has always been a delight to eat his creations.
He is totally dedicated and hard working, and would absolutely deserve a place at Ballymaloe Cookery School!
