I have decided recently that to chase my lifetime ambition to own, cook in a restaurant. I have always been an avid cook at home, with dinner parties for my friends a regular distraction from the pubs.
I grew up as a youngster with my Dad a Fish Monger, and my mum a Cook. I have been blessed to be exposed to the best of Irish at such a young age and thats where my appreciation for Irish ingrediants comes from.
I would love to win this competition because, I can realise my dream.

This recipe actually came to me in a dream one night, believe it or not well the beetroot and Mackerel part did anyway.. blackpudding came later. The beetroot is baked then carmalised in balsamic vinegar. This is then put into a tower with the grilled black pudding.Smoked mackerel is filleted, boned and then lightly seasoned and simply grilled. Adding a little acidity with the Tomato and potato salad in a Lemon dressing lightens the dish with colour and taste. Try IT, it will suprise you !! :)

Dans an excellent cook & always aim to impress with his fine dining skills! To my delight in return i sometimes get to taste the delicious results! Satisfaction guranteed!
We love his cooking so much that I have been known to follow him around in the kitchen with a notebook in hopes that we can recreate what he does in our own home. I am not the kind of person who does that. But when you taste his fare, you will understand.
