Food is my passion! Whether I’m eating alone or cooking for friends, I always opt for the best ingredients. I believe that food should nourish for optimum health but also, very importantly, it is a social experience to be enjoyed. I would relish the opportunity to be part of Cheffactor and learn from the best at Ballymaloe Cookery School, an environment that matches my philosophy towards food and life. I would also love to learn the dynamics of a successful food business from Cully and Sully.
You have 500 characters to tell us about your dish: 
Choose good produce and it doesn’t take much to make it taste delicious! That’s what I did with this dish. The ham hocks are from Byrnes of Phibsboro, a wonderful local pork butcher that smokes on site. The mushrooms, flat leaf parsley, shallots and condiments are from a fantastic neighbourhood shop (Lilliput Stores), which stocks local and organic goods. I didn’t want to overshadow the ham so I just tried to compliment it with wild mushrooms and a stock reduction, pressed into a terrine mould.
