I’m Alison Gorman & I live, think, talk & sleep food.I love growing it, touching it, smelling it, cooking it & definitely eating it.Ive been dreaming of attending Ballymaloe for so long now I cant remember what I dreamed about before that.I even moved to London so I could save to go!I would love to cook professionally, creating dishes & doing justice to Ireland's amazing produce. If I won Cheffactor, I would seize the chance to learn everything I need to be a great chef, and more, at Ballymaloe.

My dish uses lovely organic lamb shanks, later in the season as the flavour is gamier & more complex. Lambs grassy meatiness pairs well with spices,so I took inspiration from a classic tagine, with cumin, coriander & cinnamon, adding some cardamom & allspice, slow cooking it until meltingly tender. Quince is currently in season, and its rosy pink hue makes it a beautiful, as well as aromatic and delicious, pairing for this dish, which I serve with cous cous garnished with chopped fresh mint.

What a beautiful dish, I would love to see this in the Cully and Sully range - perfect comfort food! Hope you win the prize, shame it's more of a popularity contest than a food competition - yours looks to be the best recipe as far as I'm concerned!
