Yes I’ve got what it takes to be Irelands first Cheffactor!! My first love besides my wife is good food.For the last few years I have been challenging myself to develop my cooking skills. Much to the joy of my family and friends I now make delicious bread,pasta, stocks,pastry,cakes & ice creams.It is my dream to do the Ballymaloe course. I'd use the knowledge gained there to continue my love affair with food and to seize this brilliant opportunity to take my culinary skills to the next level

My recipe is thai fish cakes with an asian style dipping sauce. Such a great dish, so versatile - superb with a squeeze of lime and a splash of sweet and sour sauce. Your party is guaranteed to rock if you serve these as little canapés with drinks. It is also lovely served as a starter with rocket leaves or as a main course with noodles. I use hake, a sustainable Irish fish, thai red curry paste, nam pla, cane sugar, fresh coriander leaf, green beans,& kaffir lime leaves. Absolutely delicious!!!

Simon's fishcake are like no other - they melt in your mouth - amazing!! Taste them the proof is in the fishcake!
He does crabcakes,thaifishcakes and mouth watering fishcakes with a superb sauce. Of course his lemon drizzle cake by contrast is in a class of its own!

Recently I tried samples of Fish cakes by Simon at a 'tasting' in my local fish shop.
Wow, was I impressed! Simply delicious! So good I just had to vote for him here.
I had the pleasure of tasting these fish cakes - they were simply delicious. Even my uncle who is a fisherman (and not easily pleased) loved them! Best fishcakes I've tasted in a long time
