I should win Cheffactor because I have been a passionate cook since baking with my grandmother from the early age of two. Originally from Cork,the highlight of my week was to get a cake after mass on a Sunday from Ballymaloe.I believe cooking should be simple,using fresh local ingredients and made with love, as Cully and Sully produce. With a professional qualification from Ballymaloe I could achieve my dream of opening a place of my own with the same magic that Cully and Sully have captured.
You have 500 characters to tell us about your dish: 
My dish is inspired my the beautiful flavours of lime and corriander.These fresh ingredients are combined with sweetcorn for gently fried fritters, accompanied by a tomato, corriander, lime and black perrer salsa complimented by zingy creme fraiche. The chicken strips have been grilled after marinading in chilli, smoked paprika and a little garlic for a finger licking, light dish delicious for lunch, a starter or as a main course accompanied with green salad and homemade white crusty bread.
