I simply do not know anyone more passionate about there food than Nic.. I shared a house with Nic for a number of years and she has one hell of a way of discribing the menu.

I have sampled her culinary delights and can only say...WOW!

I absolutely adore this dish - I love the Irish twist she has given it. It is always a culinary adventure with Nicola in the kitchen. Food is so much a part of who she is that when you call to drop something off, you are greeted with "you have to try this" and the response is usually "Oh my God!!"

Nicola has touched my life in so many positive ways. She is an incredible person with so many talents which she shares in an understated yet magical way. Her organic cup cakes have brightened many occasions and have not and will not be beaten in my book! Nicola shines as a person and would make an incredible winner and ambassador for 'Cully & Sully'.

Any time we have gone to Nicola's for a party or social gathering we are always met with a feast! She beams from ear to ear with delight. Nicola truly loves to cook for people and her food is simply mouth watering you really can not say no, no mater how full you are My favorite thing Nicola makes is the most delicious cup cakes, the butter icing is amazing I really can't get enough! She deserves this more than anyone i know! She's an amazing cook!!

Nicola makes food that looks, smells and tastes amazing! She deserves an amazing opportunity like this. As she says ... 'what's for you won't pass you' and I hope this counts now more than everxxx

Wow this dish looks fabby!!

Im Lucky enough to Call Nic my friend, and have had the joy of eating her fabulous food for many years, including the dish above, which is so yummy & comforting!!
She loves everthing to do with food, walking around town she reads every menu, she would watch cooking shows 24/7!!
Ballymaloe is a dream of hers & I cannot think of anyone more deserving, she would cherish every second of it.

What can I say, Nicola is hands down the most passionate person about food that I know, she truly adores everything to do with it and it brings her so much joy. I know she is the most worthy contestant in this competition, she is brilliant at everything she puts her hand to and I would love to see her doing what she wants and has wanted to do for a long time! Oh my god i am so happy that Nicola has entered this competition and shared her amazing dish with the whole world. This is what Nic has dreamed of for as long as i can remember. She has tried, and suceeded, her hand to so many things, but this is truly her love. She would make a lettuce leaf sound mouthwatering!!!! This is your time Nic and you soooo deserve it.
