Cully and Sully, two famous dudes, Renowned for their wholesome, economic foods, can help me make my dream come true, to attend a course at Ballymaloe. My happiest time, I always feel, Is when mates come around for an evening meal, nothing extravagant, cos the budget is low, it's amazing what you can do with a little dough, I've done my share of pasta& rice, to be more adventurous would be nice. Firstly I tenderised and seasoned the free range chicken then added diced chorizo and red onion and cooked on a low heat. I then steamed the (locally sourced organic!) green vegetables, while the potatoes were sitting glazed in olive oil in the oven. When the veg and chicken strips were ready I added my very own special saucemixed it all up together and spread evenly across my golden crispy spud cups, which were now hollowed out and full of creamy mash potato. Just a sprinkle of cheese-Finished!

I can vouch for Sean's love of really good food. He was raised in a house where food and meal times were one of the most important times of the day and there was ALWAYS good food around! This dish looks like the ultimate of comfort foods, which is exactly what you want in Ireland when it's miserable out. Sean is a fantastic person to have around, he's lively, enthusiastic and great fun. When it comes to food he's very passionate, creative and eager to learn more. I can't think of anyone who deserves this more than he does. Please tell all your friends to vote for him as this really would change his life.
