On entering Cheffactor I reflected on my cooking skills and thought that I would not be a suitable candidate. However I enjoying cooking and base dishes I cook on whats in season and experiment with whatever I have in the kitchen.I enjoy cooking for friends and family and am ambitious when trying to make the "at home dining experience" better that that of eating out!It would be a dream come through to be selected for Cheffactor and a chance to work a team in Ballymaloe.

I found this Salad on a menu when I was in San Francisco and put my own variation to it.The greens are made up of spinach and mixed leaves.I added red onion, beetroot, pecan nuts, pear and Cashel Blue cheese.Hot chicken is then added to the salad and it is served with homemade soda bread.I used a basic vinagrette dressing All these ingredients combined gives a the salad a delicious taste.

I can vouch that this is absolutely delicious! I'm not usually a blue cheese fan but the Cashel blue with this dish is fantastic!

By any chance did you pick up this recipe in Zuni cafe? An ex-girlfriend of mine used to work there on the wood burning oven making the most succulent delicious warm chicken salads imaginable. No Cashel Blue in them though. Yummmm!
