I developed my passion for cooking during the long hours I was on home dialysis when my kidneys failed.During this time I watched cookery programs on TV and created recipes,testing them out on my family. Since my transplant 2 years ago I have had work experience for 2 weeks in Ballymaloe.It was the highlight of my year.If I won Chef-factor I would dedicate it to my donor who gave me a second chance at life.Like Ballymaloe & Cully & Sully I want to make a difference to peoples culinary experience

This is a starter which is my own creation called Sally’s goat’s cheese tartlet with pear and rocket salad. The tartlet has a crispy short crust pastry base filled with red and yellow peppers, red onion, sundried tomatoes and topped with creamy goat’s cheese and green pesto. This is served with a salad of peppery rocket leaves, thinly sliced pear, parmesan shavings and pan roasted pine nuts .The salad is then drizzled with a lemon dressing. This is highly nutritious,delicious and looks great.
