Nothing makes me happier than when I'm pottering around in the kitchen making, baking, grilling and tasting. I love sharing my creations with family, friends and housemates mostly to their delight. A cliche perhaps but it is my passion, my dream to one day have my own restaurant and share with others the wonders of the culinary world. I had a sneak peak of Ballymaloe Cookery School when I was 15 on a school trip and I always promised I'd make a return visit.

Myself and Rachel (my housemate in college) literally threw this recipe together a mishap to be honest but a damn good one. It was a wet and cold winter's evening in Galway city and we fancied something yum but it was too awful to venture out. So we used whatever we had in the kitchen at the time and this is what happened...... BERRILICIOUS!!!
