I’m on maternity leave so I’ve had a bit more time to cook & bake (admittedly quite a lot of gloopy baby purees)! Gradually I’ve been learning new dishes & techniques to make yummy food for adult food lovers. The results have gone down well! I’d love the opportunity to take part in the fantastic Ballymaloe course to really improve my cooking and baking. Though hard work, I think I’d learn lots to create super yummy dishes & it’d be great fun! My family & friends would love to eat the results!

I’ve made a Red Velvet Cake with beetroot. The cake looked beautiful & sounded yummy which inspired me to have a go at baking it. It was a more complex cake than I’d usually do but I enjoyed the challenge. I’ve never had a vegetable like beetroot in a cake before, but think it works surprisingly well, adding a vivid purple colour to the batter. The icing is a meringue icing which is like melted marshmallows, very gloopy and rather yummy! The final result looks good & tastes even better!
