A short spell as a vegetarian in my teens kick-started my love of cooking,and now I am a fully-fledged(meat eating!)foot nut.Over the past 15 years I have been fuelling my obsession with a shelf-breaking collection of cookbooks & food magazines,an ever-fattening repertoire of recipes & more recently my own food blog: eimeareatsalot.blogspot.com. Learning to cook professionally & working with food would fill me with joy on a daily basis. Winning this competition would help me fulfill that dream.

I love Irish lamb,I think that it’s a national treasure.I also love spicy food & oriental flavours & this dish brings together my two foodie loves in one rich & satisfying stew.The tender lamb marries beautifully with the soy sauce,dry sherry & red wine vinegar,star anise,orange zest & red pepper flakes.It’s from my food-spattered Ballymaloe Cookery Course book & is so flavoursome that simple side dishes suffice: fluffy basmati rice & greens stir-fried with sesame seeds & a splash of soy sauce.
