I would relish the opportunity to learn from the best. As a genuine foodie I especially love sourcing,sampling and experimenting with savoury ingredients.I’ve recently completed a MA in EU politics but I tried to incorporate my love of food by researching food policy issues-GM food and nutritional food labelling!I am enthused by the growth of Irish artisan food producers and enterprises.I would value an opportunity to gain insight into a sector where being passionate about food is a way of life.

This Retro Roast Pork is a family favourite.The dish uses the best of fresh local seasonal produce,prepared simply to create a nutritious and comforting autumn meal.The roast loin of pork is coated in a crust of rosemary,sage and thyme and stuffed with traditional Clonakilty black pudding.It's served with a Bramley apple sauce,roasted butternut squash and parsnips as well as steamed carrots tossed in a parlsey butter, broccoli and home grown roasted rosemary potatoes.

Super work! A great dish and notably her use of home grown produce is a delight to see! With simple ingredients she has prepared a feast! Good luck and it would be lovely to see such talented and informed young chef going through to the final!
