Twenty years ago I chose to do a chemistry degree.I love chemistry but have always felt the pull of cooking and food.A chemistry experiment and cooking a dish have similar characteristics-both have a list of ingredients,set of instructions and basic rules.All I think of is food and cooking. I love to see the smile on peoples faces when they eat my food. Last year I held a long table banquet in our allotment for 60 people and got such a thrill from seeing all these people eat food I had cooked.

This is a cake I baked recently for a charity and it went down really well. Even though it may look complicated it is not that difficult to make as long as you focus on each element and get it right. The sponge is your basic victoria sponge with cocoa powder in it. Each layer of sponge is spread with a raspberry coulis. The two fillings are marscapone vanilla cream and chocolate hazelnut praline mousse. The cake is topped with chocolate ganache and fresh raspberries.

This cake makes a bad day ohh so good...The memory lingers long after the last morsel has melted in your mouth. It creeps into your imagination when you least expect it. You can't focus on anything else. The only thing possible it to have a slice and start the whole induldgent cycle again.
