When I was 5 I watched a cookery program on TV. The following morning I made pastry all by myself, even cleaning up the floury mess! Later my Mam cooked a ready-made steak & kidney pie & told me she’d used the pastry! I was so proud of myself! Cooking has been my passion ever since. I studied Hotel Mgmt & dreamed of opening my own restaurant. Although I later left catering I never lost my passion for cooking & now, more than ever, wish to fulfil my dream of opening a quality food establishment.

Being October I though the humble pumpkin was a good starting point for my dish. My husband loves homemade peanut butter & I’d recently made a batch so I decided to use peanut butter in a pumpkin soup. I don’t like using shop-bought buttermilk & make my own using milk & lemon juice but recently I’ve started using yoghurt in my bread instead. I added plenty of seeds including delicious fennel seeds & it worked a treat! The bread & soup work perfectly together as a delicious hearty Autumn lunch.
