Hi all, my name is Paul and I have a great passion for cooking. I love cooking for family and friends. From an early age I had a great teacher (my mother), and I have taken onboard all her tips, which have given me a great appreciation for food. I find cooking very relaxing, and would love to win the Cully & Sully prize. I would be extremely honoured to work with a team of chefs at Ballymaloe. Thank you for giving me this opportunity to showcase my dish.

My dish is slightly usual, as Avocado is normally served cold. This dish is a mixture of Avocado, baby tomatoes, shallots, Philadelphia cheese, lemon zest, lemon juice, cayenne chilli pepper, paprika, and Tabasco sauce. They are all mixed together and then placed back into the shells of the Avocado and baked for 15-20minutes in the oven. It’s a starter that everyone should try!

Having personally had the pleasure of tasting Paul's Baked Stuffed Hot & Spicy Avacado at one of his many Dinner parties I can honestly say it is the most divine and refreshing starter I have ever eaten. All the flavours compliment eachother and it is truely a beautiful dish that he has perfected!
Ive tried this dish and I think its DELISH (DELICIOUS)
This is a very unique recipe and would be a winner to prepare either at home or to have in a good restaurant
The mixture of the different ingredients would be a real hit especially with people who are vegetarian.

I tried this over the weekend as a surprise for my wife.... and she loved it... so simple.. and so easy to make... and the flavours were just incredible. This earned me serious brownie points... so it's a big thumbs up from me for Paul's Simple yet Superb dish. Smiler...

A quick comment from a vegetarian - it was one of the most delicious starters I have ever tasted. Vegetarians have a tendency, when cooking, to go for really tasty ingredients so I was quite amazed that a carnivore got it so right. The spicy dish was well presented by a spicy bit of stuff. It really ticked all the boxes.
