Butter Masala with Homemade Paneer & Naan bread. This dish has a special place in my heart. My husband & I took a trip to India & ate it almost every other day! The dish brings me back to some of the best times of my life.
Traditionally it doesn't include spinach, I added it because I love spinach (a strange favourite food – move over Popeye!) but also for the amazing colour and flavour. I have made my own Paneer (Indian cheese) & Naan bread to create this delicious curry! Want to taste it?

How do you make the paneer?
Cully
Making the paneer is easier than you might think. You just need some full fat milk, lemon juice, a pot and a piece of muslin.
Put the milk on to boil and just before it starts boiling - when you see the little bubbles on the side - take it off the heat. Add the lemon juice, this makes the curds and whey separate (just how Ms.Muffet would have liked it!). If the curds don't completely separate then add a little more lemon juice. You can see the solids (curds) and the liquid (whey) totally splitting away from each other.
Strain the curds through the muslin cloth (keep some of the whey - you can use it instead of lemon juice in the next batch of paneer). Allow the last drops of liquid drain out and then put a heavy item (I use a chopping board and two pans stacked together) on top to compress the cheese.
After about 2 hours the paneer will be ready to use. You can wrap it in cling film and put it in the fridge for a couple of days before using it.
