I think i should win cheffactor because of the mental wellbeing of my friends and family. I NEED to have an outlet for this all-consuming passion for food and everything it entails! I'm a teacher and I come into my students giving them details of new dishes I have tried etc and the dept of education will be only too delighted if i won this so the curriculum would finally get taught. I know i would be just so happy to follow my dream and my friends and family would be doubly so!!

My pan-fried duck is rubbed with chinese 5 spice, fresh thyme and olive oil. It it served with a coriander and chilli sweet potato mash, green beans and a homemade red onion marmalade which has been cooked in butter, brown sugar and balsamic vinegar. You get the heat from the chillies, sweetness from the onions and the balsamic vinegar provides the sour.Oh and topped off with a parsnip crisp! I've eaten my way around the world and hope to continue the journey!
