Cooking is such a huge part of my life and winning this competition would be the springboard to a dream career.I love every part of the process;chopping,stirring,baking,wanderng around food markets discovering new ingredients but mostly what I enjoy is how being in the kitchen makes me feel.Cooking is so creative,satisfying & fun.The ultimate reward is when you bring the food to the table and hear the quiet before the "YUM"!I would love the chance to cook for you guys and prove you right.Edel

This selection of bread represents everything I love about food and cooking:great quality produce,tasty,simple but impressive& adaptable to what's in season.This is the kind of food made for pure enjoyment!I made a Rosemary & Seasalt Foccaccia,Impanata(small stuffed foccaccia)filled with broccoli,lemon zest,chilli & garlic and my "get up in the middle of the night to eat it"-Pizza Fritta-the base is fried until doughnut like with toppings added after-cherry tomato sauce,ricotta,aubergine & basil
