We all want to find our niche in life, something that we are good at that makes us happy. I've found that cooking, especially baking, is my niche! Not only does it make me happy but it also seems to give pleasure to others, which is the best feeling in the world. To win this competition would change my life by giving me the opportunity to further develop my culinary skills so that I can put smiles on many more faces through my passion for cooking.

Nuttin' Beets Chocolate Cup Cakes! I used beetroot from my hubby's veg patch instead of flour so they can be enjoyed by people with a gluten/wheat intolerance. Hazelnuts, almonds & oodles of luxurious chocolate balance the flavour of the beets. Topped off with cream cheese icing, tinted pink with beetroot juice, makes for a scrumptious & indulgent treat with only a sprinkling of guilt. A candied beetroot loveheart finishes off a sweet taste sensation that NOBODY could resist! Grá xxx

do you cook the beetroot before hand?
Yes, I peeled the beetroot and cooked them in water until tender. I then drained them and once cooled I added them to the other ingredients. I saved the cooking liquor to colour my icing.
I'm in agreement that finding your niche is the key to happiness in this life, just love all the naturel products you've used in your cup cakes, this is what we want to see in our local stores
