Winning cheffactor would fulfil a secret ambition, the kind you dream about but don’t believe could truly happen. As a student I like to play around with recipes making them more feasible for a student’s budget *gasp*. But when given the chance experimenting is where I dazzle; trying out traditional dishes and giving them that little tweak that makes them memorable. So what would my last supper be–the type of food that I like to cook: good, healthy ‘home is where the heart is’ food. Vote for me.

This roasted rack of lamb is a classic dish with a few twists. None of granny’s old mint sauce here - instead I’ve combined raspberries, cranberries and lamb marinade to make a mouthwatering coulis, which compliments the juicy lamb. It wouldn’t be a proper roast without spuds, these come in the form of a delicious potato cake; crispy on the outside, soft on the inside, topped off with spinach resting in a roasted pear - a dish to warm the heart on cold, wintery nights. ‘Ewe’ will love this dish!
