Since moving to Cork and discovering Ballymaloe, I have been inspired to cook beyond the everyday basics. My husband and friends have benefited greatly from this! Desserts were definitely the most popular dish and so started “Dessert of the Week” on my Facebook page! I would love to expand my culinary knowledge, particularly with savoury dishes and be better than just 'a good cook'. I want to have the confidence to create my own dishes and share them with others.

My dish is a Normandy Apple Flan. The very first meal I ever made for my American husband was Irish Stew and Apple Tart, to give him a taste of Ireland! The Apple Flan is an evolution from the traditional apple tart and shows how my culinary skills have developed over time. I really enjoy cooking for friends, especially making desserts. This one is simple yet impressive on the table, although it doesn't stay there for long!
