As early as I remember I have loved everything about food! I am lucky to be friends with people as passionate as me. While traveling in Oz a friend of mine was asked what it was like to travel with 5 girls-did they talk about make-up all time? He replied-"No, all they talk about is food! What to eat, where to buy, how to cook, was it nice, when were they eating next!" Food is my life and this opportunity would be a dream to build on my current knowledge from such amazing chefs in Ballymalloe!

Because of the over fishing of cod, this dish has hake and haddock-no cod in me! It is a tomato based chowder with sliced fennel bulb, shallots, garlic, smoked paprika, white wine, tin of tomatoes, cubed potato, hake, haddock, prawns and some thyme. I squeeze some fresh lime on before serving for an extra zing! I buy my fish at the Douglas Court farmers market on a Saturday. Zoe Harrington's seafood stall always has such fresh fish(caught by her brother in west cork). It's delicious-no coddin'!

Fresh is the best to success

I cannot get enough recipe's on seafood and living on the island of Australia we are surrounded by the freshest of seafoods, so I can associate with another passionate seafood person. Fresh is the most important ingredients, taste, color and presentation this dish has it all.
Elaine is an all consummate budding chef just waiting for the Cully&SullyÂ’s Cheffactor to take her to the next step! A once in a life time opportunity to pursue a culinary career or get involved in making their own good food would have to be as fabulous as a bowl of 'no coddin me chowder' .
