I'm completely passionate about honest good tasting food. I love to make informed decisions on the food I feed my family hence I want to know everything possible about it - from farm to fork! I have been lucky enough to attend Ballymaloe for a number of short courses and I was truly inspired by Darina with her infectious love of all things food related. I would truly love the opportunity to be part of the course but also I'd love to gain the experience of food production with Cully + Sully.
You have 500 characters to tell us about your dish:
Like so many dishes in the Cully and Sully range this sauce is so versatile as it can accompany pasta, rice or potatoes. I sautéed onion, garlic, chilli and mushrooms in a little butter before browning the seasoned chicken pieces and adding the chorizo. Then all is simmered in some white wine and cream. A min before taking off the heat add some toasted pine nuts then spinach, not only for colour but also for its wonderful nutrients. There is warmth in this dish but also it is deliciously creamy.
