I have aspirations to launch some commercial products and also to eventually teach, so I feel twelve weeks at Ballymaloe being grounded in good skills and culinary knowledge would be an excellent start, not to mention two weeks at Cully and Scully getting to grips with the all important business side of things to make the whole package work. What a fantastic prize!
You have 500 characters to tell us about your dish:
My dish is a pastry filled with slow cooked beef with onions, tomatoes, peppers, garlic, wine and spices. It is based on a South American/Canarian dish which is normally served in a type of corn cake but as the flour is difficult to source here I have used pastry instead. I have served it with two fantastic Canarian sauces made with garlic, chillis, olive oil, herbs and spices and a little green salad with my homemade raspberry and lavender vinegar dressing and a sprinkling of black sesame seeds

I'm winging my way back from Yorkshire just to try it. Morag's cooking is unbelievable and with 12 weeks at Ballymaloe she'd beat the rest of the world. I do miss Cully & Skully.
